Growing up, I remember my sister's favorite treat to get at the mall was always a double doozie cookie. I always preferred the bag of mini cookies, but later in life she swayed me to her side... double doozie cookies are delicious! Rather than the traditional chocolate chip, I thought it would be festive to assemble some double doozie sugar cookies for Valentine's Day.
For a short cut, store bought cookies or or pre-made cookie dough may be used. Or, use your favorite sugar cookie recipe and Valentine shaped cookie cutters and make your own. If you don't have a favorite, this is the sugar cookie recipe I've been using lately. It makes a soft but sturdy cookie great for decorating, and it tastes divine! I usually double the recipe while I'm at it and freeze 1/2 of the dough for later.
Sugar Cookie Recipe
1 cup sugar
1 cup butter, softened
1 egg
1 Tablespoon milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/2 cups flour (plus a little more for rolling out cookies)
1/2 teaspoon baking powder
1/2 teaspoon salt
Beat sugar and butter together in mixer until creamy. Add egg and beat to combine, then add milk, vanilla, and almond extract and mix together. Combine dry ingredients and beat in a little at a time until all are well incorporated. Roll out dough on a floured surface until about 1/4" thick. Cut out desired shapes and bake in preheated 375 degree oven for 8 minutes. Cookies will firm up as they cool, do not over bake or allow to brown.
After the cookies are baked and cooled, scoop a large amount of icing on the bottom side of one cookie and gently spread to the edges while leaving icing thick. I used store-bought buttercream that I colored pink, and a scoop works perfectly to get uniform amounts of icing. For reference, my cookies are about 2 1/2" wide and a heaping 1/2 oz. scoop was just right.
I made my cookies small...by the time you double them up and load the middle with frosting, just a little is enough! Finish them off by placing another cookie on top of the icing, with the bottom of the cookie against the icing.
If you want to add a bit more fun, gently squeeze the cookies together until the icing just starts to ooze outside the edges of the cookie sandwich.
Then, roll the edges in a small bowl filled with your favorite sprinkles.

ReplyDeleteHi! It totally depends on the size of your cookie cutter. Mine was pretty small and I think I got between 3-4 dozen from the recipe. Hope you love them!
